Who doesn't love a good DIY project, right?
Okay, maybe not the case but this one is pretty sweet.
If you are consuming a diet that is devoid of sugar (think inflammation and food for pathogens and candida), or you are limiting your sugar intake for increased health and vitality (I like this a lot), you know how limiting this can feel at times. Stumbling upon a decadent Paleo diet recipe can be pretty exciting until you notice that the cacoa, almond butter mini-loaf contains maple syrup or honey as the sweetener. Oh man, another food no-go.
I'm happy to say there is a solution. Make your own sugar free "honey" and "maple syrup" to add to recipes as needed. It sounds a bit tedious but there is no bee keeping or tapping of trees involved whatsoever. I promise!
All you will need to execute this is a bag of xylitol, some water, and a mere 60 seconds. If you choose to boil up some maple syrup you will need all natural maple flavoring.
A bit about Xylitol first.
The name denotes an artificial sweetener chemical-bomb but it's actually a natural sugar alcohol found in the fibers of birch bark, vegetables, and fruits. It tastes similar to cane sugar but it has very little effect on blood sugar as it has a glycemic index of 7 (glucose has a GI of 100), making it an excellent choice for those dealing with diabetes. It may supress the growth of candida making it a candida friendly sweetener and it kills bacteria in the mouth. It can be found in all natural chewing gums, toothpaste, and nasal sprays.
Xylitol is processed so use it in moderation and make sure to purchase GMO free versions as most Xylitol comes from corn.
1/2 cup xylitol:
1/2 cup water
Put the xylitol and water in a pan on the stove. Bring to a full boil and let it continue to boil for about one minute. It will look like a slightly thinner syrup. Stir in maple flavor for "maple syrup" or leave plain for "honey". Done! Keep this stored in a jar in the refrigerator for several days. You can make more or less, just keep quantities one to one with xylitol and water.
