I am always on the lookout for a new and different, yet fast, breakfast option, particularly when the weather warms up and I want to get outside for a walk bright and early (weather gods, I am counting on the month of May). Hence these gluten, dairy, and sugar free protein bars. They are so easy to prepare, they literally take 5 minutes plus some time to freeze.
3/4 cup gluten free oats, blended into a flour (I use my Nutribullet for this)
1/4 cup pea protein powder, vanilla
1/4 cup organic brown rice crispies cereal
1 heaping tablespoon chia seeds
1/4 cup chunky peanut butter, or almond butter
1/4 cup sugar free maple syrup, I use this one, or use regular maple syrup
1/2 teaspoon vanilla
2-3 pinches of sea salt
optional: dark chocolate for drizzling on top, these taste great either way
Mix together oat flour, protein powder, rice crispies, and chia seeds. Add in peanut butter, maple syrup, vanilla, and sea salt. This will resemble cookie dough. Line a loaf pan with parchment paper and press this mixture into the pan. Sprinkle a tiny bit of salt on top if you would like as this actually brings out the sweetness in these bars even more. Put in freezer. Melt some dark chocolate (either stevia chocolate chips, an 85% cacao bar, cacao nibs, or whatever you want to use) in the microwave until smooth and drizzle over the cold or semi-frozen dough. Put back in freezer for several hours until completely firm. Pull out parchment paper and cut into bars. Store in the freezer and eat these frozen.
