Superfood Oatmeal
With the polar vortex set to make an encore performance in your neighborhood, tomorrow, I thought I would share my superfood oatmeal recipe. May it keep you warm, full, energized, and inspired to incorporate more superfoods into your diet!
Do you enjoy oatmeal for breakfast? Oatmeal is a delicious breakfast option that provides fiber and nutrients to your body. You’ll get a dose of zinc, magnesium, selenium, B12 and fiber to boot. Add in some superfoods like chia and flax seeds and you’ve got a tasty bowl of anti-inflammatory, nutrient dense goodness to power you through the morning.
Here is how I enjoy mine: Serves 1-2
1/2 cup gluten free oats
1 cup almond milk, I use vanilla and sugar free, I prefer the brand Silk
pinch salt
Put these three ingredients in a pan and bring to a boil. Reduce heat and simmer for a minute or more, to whatever consistency you like.
While this is simmering I add:
4 drops of Stevia, if using plain almond milk you could add vanilla Stevia drops
1 heaping tablespoon of Flax seeds: excellent source of omega 3 fatty acids, phytonutrients, antioxidants, fiber
1 heaping tablespoon of Chia seeds: calcium, protein, fiber, phosphorus
cinnamon: warming, antimicrobial, magnesium, calcium
chopped walnuts: protein, more omega 3’s, antioxidants, vitamins, minerals
Remove from heat and pour into a bowl
I usually top this with unsweetened coconut flakes, goji berries or blueberries and a few more chopped walnuts. Said coconut will be getting its own blog post soon; too many health benefits to include here.
You get the idea... You really can't mess this one up and you can add just about anything to suit your taste; banana slices and a dusting of cacoa, almond butter and strawberries etc...
