Grain, Dairy, and Added Sugar Free Banana Bread

Breakfast is about to get a little sweeter with this almond flour banana bread.
If you are like me, not having something sweet in the kitchen to pick at throughout the day means I snack on the wrong foods. This fits the bill perfectly; would be great with some coconut milk ice cream and cacao nibs on top as a full fledged desert too! Although this bread contains three bananas which is a bit more than traditional banana bread, the almond flour, flax seeds, eggs, and coconut oil balance out the carbohydrates from the bananas nicely.
Ingredients:
3 mashed bananas
3 eggs
1/2 cup coconut oil melted
splash of Braggs apple cider vinegar
1 cup almond flour
1/2 teaspoon baking soda
1 heaping tablespoon ground flax seeds
1/4 teaspoon cinnamon (4 shakes of your cinnamon dispenser)or a bit more or less to your liking
1/8 teaspoon ginger powder (2 shakes of your dispenser) or a bit more or less to your liking
pinch of salt
chopped walnuts for garnish
xylitol and cinnamon for garnish
Preheat your oven to 350 degrees and grease a loaf pan with coconut oil. Combine all ingredients in a bowl and pour into your loaf pan. Garnish the top with walnuts and a sprinkling of xylitol and cinnamon for a little crunch and sweetness. Bake for 45 minutes or until browned and a toothpick inserted in the center comes out clean.
