Almond Crunch Energy Bites


If you are out the door early and leave little time to cook breakfast, or you enjoy a mid-morning or afternoon pick-me-up, these almond crunch energy bites are for you. And they are teenage son approved so no need to say anymore. Accept that I could really go for one right now.... Oh, and these flavorful bites are dairy and gluten free; sugar free too if you leave out the goji berries and use the “maple syrup” I use.

Ingredients: makes 20 or so

  • 1 cup almond flour

  • 1/2 cup almond butter

  • 1/3 cup dried goji berries

  • 1/4 cup xylitol maple syrup or real maple syrup

  • 2 T sesame seeds

  • 2 T pumpkin seeds, salted or unsalted

  • 2 tsp almond extract

  • 1 tsp vanilla extract

  • 1/2 cup gluten free rolled oats

  • 3 T slivered or sliced almonds

Combine all ingredients accept oats and almonds in a food processor and process on high for one minute. Add oats and almonds and process for another 30 seconds. Wrap dough in plastic wrap and put it in the freezer for about 15 minutes to firm up a bit. Remove and roll dough into one inch balls, store covered in the refrigerator. Enjoy!
